Ingredients
1 Head of Cauliflower, chopped into bite-sized pieces
5 TBS Vegetable Oil
2 tsp Cumin
2 tsp Paprika
1 tsp Chipotle Powder
2 tsp Garlic Powder
Pinch of Salt and Pepper
16 oz jar Romesco (Red Pepper Tomato) Sauce
Corn or flour tortillas
Lime wedges
Thinly sliced Red Onion
Chopped Cilantro
Sliced Avocado

Directions
Preheat oven to 400ºF.
In a medium bowl, toss cauliflower pieces with the oil, salt, pepper, cumin, paprika, chipotle powder and garlic.
Spread out seasoned cauliflower on a parchment lined backing sheet & roast in the oven until edges start to get crispy and stems are tender, about 30 minutes.
To plate: warm tortillas on the stove & place 3-4 pieces of cauliflower on each one. Drizzle each tortilla with Romesco sauce and top with red onion, slivered almonds, avocado, cilantro and a squeeze of lime.
